Everyday life has its own struggles and challenges, we all know that. Often we find ourselves drained and in need of a tight hug with a reassuringly whisper saying everything is going to be fine.
For those that for whichever reason are away and struck with homesickness trying coping with it all: I’m with you, believe, I know exactly how you feel.
So here is a nice recipe that serves as a self, warm, containing hug. The fragrant sweetness of the pineapple and the sticky sauce warranties to send your worries away.
To make enough for 3 -4 servings, plenty for leftovers you will need:
- 700g spare ribs chopped (or diced pork chops)
- 2 eggs
- 1 tbsp corn flour
- Vegetable oil for frying or coconut oil.
- 3 tbsp tomato ketchup
- 1 ½ cup chopped pineapple (try to use fresh)
- 1/5 cup orange juice
- Chlili flakes
Serving suggestion: Steamed rice
After chopping the ribs or pork chops, dry them with a paper towel, sprinkle some salt and rub it, then let them rest.
In the meantime, in a medium bowl whisk the eggs and cornflour and add enough water just to make a thick paste.
Heat about ¼ cup of oil in a pot or wok, dip the meat in the batter and fry until golden brown making sure each piece is completely cooked. Set aside on a plate lined with paper towels to absorb the oil.
Heat a tablespoon of oil in a wok or big pot, when its hot toss the pineapple and sauté quickly, add the ketchup, orange juice and chilli flakes, let the pineapple release its juice to season the sauce, then add the fried pork and mix, serve hot on a bowl of steamed rice.
