Express falafel with a side of tzatziki and radish slaw

Easy, packed with strong flavours, great balance of carbs, oils, proteins and fresh vegetables to ensure a happy and full tummy.

To make the falafel: crop

  • 2 tins of chickpeas
  • 2 garlic cloves
  • 2 tbsp finely chopped parsley
  • 1 teaspoon salt
  • 2 tsp powdered cumin
  • 4 tbsp breadcrumbs
  • vegetable oil for frying

Soft and hot pita bread to serve

Method:

Drain and rinse the chickpeas and grind them in a food processor, when they turn into a smooth paste, add the garlic cloves, salt and breadcrumbs, mix again.

Transfer to a bowl and add the cumin, and parsley, mix thoroughly and let slightly firm up in the fridge for 30 minutes.

In the mean time you can prepare both the tzatziki and radish slaw.

For the tzatziki you will need:

  • 1 peeled, seeded and finely chopped cucumber.
  • 1/cup of greek yoghurt and a dollop
  • 1 tbsp of fresh mint leaves, chopped
  • 1 clove of garlic minced
  • Salt

Combine all and pop in the fridge to cool.

Radish slaw.

  • 2 cups of freshly grated radishes
  • 1 chopped tomato
  • 4 tbsp of sourcream
  • 1 tbsp of mayonnaise
  • Salt

Mix everything and cool in the fridge.

Take the falafel mix out of the fridge, take 1 big tbsp. of the mix and shape it into a ball, fry in hot vegetable oil until both sides are golden brown.

Once the falafel are ready, take the slaw and tzatziki out, have your hot pita bread ready and tuck in!
