These devils make a lovely breakfast in bed treat.
By the time your toast and coffee are ready, the eggs will be too, and they are meant to be individually baked so no need to serve, just take out of the oven and dig in! … maybe let them cool off a bit.
- 1 big tomato
- 1 tbsp chopped onion
- 1 tsp of chipotles
- 1 tbsp of oive oil
- 1 egg
- Ground smoked paprika to garnish
- Salt+ pepper
Preheat the oven at 220ºC / 390ºF
Sauté the onions, tomatoes and garlic and chipotles for about 5 minutes (low heat) and season the salsa with salt & freshly crushed pepper.
Oil each ramekin. Spoon equal portions of the salsa into the ramekins and an egg to each.
Bake for 8-10 minutes.
Take out and garnish with some paprika.
Serve warm *not radioactive hot* with some freshly made toast.
