No Fuss Week Pasta Dinner

Sometimes less is more, and thank God for that.

When I ponder about how our lives can be so  unbearably  hectic, the last thing I want is to stress over dinner.

There’s no shame in trying to simplify cooking, specially if the result is a healthy, fast and flavourful meal, the secret to success is very simple: a well stocked fridge and a highly functional pantry.

As long as you have those things covered, food preparation shouldn’t be a painful task.

A two course meal can be the perfect solution to a long day, so here is my speedy pasta: Stilton and walnut rigatoni that served with a nice abundant leafy salad will restore you from within and will put a smile back on your face.

To make 2 generous portions of pasta you will need:

  • 2 1/2 cups of rigatoni
  • 3 tbsp of crumbled Stilton
  • 4 tbsp roughly chopped walnuts
  • olive oil
  • Salt & pepper

Method:

In a large pot bring 1.5 lt of water to boil.

Once is boiling add 1 tbsp of coarse salt, let it dissolve for 30 seconds and add the pasta. Cook it as indicated on the label, it will usually take from 8 to 10 minutes for dried pasta.

Once the pasta is cooked al dente, drain the water and transfer the pasta to a large salad bowl, add the crumbled Stilton and walnuts, mix gently with a silicone spatula.

Drizzle lightly with some olive oil. Taste before seasoning, sprinkle some freshly ground pepper.

Serve hot, followed by a salad of your choice.
