Poached eggs are a skill that’s worth developing and i’ll give you three reasons:
- They’re fresh, creamy and literally fat free.
- It’s great twist to tour regular eggs on toast.
- They make the perfect breakfast in bed (and won’t fail to impress).
*Serving suggestions for the toast you can use any kind of bread including bagels:
- You can just spread some butter whilst the toast is still hot
- Spread some ricotta cheese
- Spread some marmite and a slice of cheddar cheese
- Top with slices of mozzarella
- Spread some pesto on your toast
*Prepare the toast ahead or do it simultaneously so they’re crunchy and hot.
Extras: Blanched broccoli or asparagus sprouts drizzled with olive oil, salt and pepper…
To make breakfast for 2 you will need:
- 4 slices of toast (with any of the toppings suggested above)
- 4 big eggs
- 700ml of water
- 1/2 tbsp salt
- 2 tbsp vinegar
- Salt & pepper to season
You will need a sifting spoon.
Here’s my tip:
Because I like eating my eggs hot and you have to make 4 by the time the last is ready the first is not only cold but if you put it on a toast it will be soggy and cold.
So I came up with the idea of having a smaller pot of lightly salted really hot water on the side and as I fish out every cooked egg I will let them rest while I finish cooking the rest so by the time I serve them they’re nice and hot.
In a soup pot and heat the water on a medium heat, once its boiling add the salt and vinegar.
Crack the eggs one at the time into a ramekin or a small bowl and stir the water in circular movements and whilst the water is still moving gently drop one egg, it will begin cooking and the egg white will seem feathery.
Keep gently moving the water with the spoon and the egg will start holding a sort of roundish shape.
The total cooking time is 2 minutes.
Fish the egg out of the water and place it in the second pot. Continue with the rest of the eggs.
To serve place two prepared pieces of toast on each plate quickly top with the eggs, season with salt and pepper.
