Rainbows On A Stick

What about all the flavours of a pizza…without the kneading, proving but with all its gorgeous colours and flavours?!

These skewers make a great week dinner, they’re easy, fast, light and super tasty, you can eat them alone or with flat bread such as pita, naan or chapatis, I’ve served them with spinach risotto, turkey burgers, tabbouleh…etc.

Even the most peaky eaters will find these skewers irresistible, you can make them as hot or mild as you want but always use some honey to encourage the vegetables to caramelize whilst grilling.


To make 8 long skewers you will need:

  • 1 red bell pepper
  • 1 yellow bell pepper
  • 1 green bell pepper
  • 1 piece of halloumi cheese diced in 12 cubes (250g)
  • 16 medium mushrooms
  • 1 big onion chopped in halves then in quarters
  • 1 sweet potato peeled, diced and pre cooked

Glaze version 1:

  • ½ cup of sweet hot sauce
  • 3 tbsp olive oil
  • 1 tbsp Worcestershire sauce
  • 1 tbsp soy sauce

Glaze version 2:

  • ½ cup of brown sauce
  • 4 tbsp olive oil
  • 1 tbsp honey
  • 3 tbsp Tabasco sauce
  • 1 tbsp vinegar
  • salt & pepper

Preheat the oven at 200°CPeel and dice the sweet potato, place in a plastic container, cover and bake in the microwave for about 4-5 minutes.

You need it soft but not fully cooked.

Start preparing the skewers alternating the vegetables, be careful with the halloumi, press it tightly with your fingers to prevent it from splitting when you slide it down the stick.

Place the skewers on a tray, brush the vegetables with the sauce, turn and repeat until they are totally coated. Put the tray on the top rack, bake for 10 minutes then turn and grill 10more on the other side. Serve hot.
